Corned beef and cabbage 3 pounds corned beef brisket with spice packet 10 small red potatoes 5 carrots, peeled and cut into 3-inch pieces 1 large head cabbage, cut into small wedges 1 onion, cut into wedges Rinse the corned beef under running water. Place corned beef in large pot or Dutch oven and cover with water. Add the spice packet that came with the corned beef.

Vegetable steak soup* 1 pound of ground beef * 1 can of tomato juice * 1 package of gumbo spice * 1 can of beans (chef’s choice, Leasure used garbanzo) * 1 can of potatoes * 1 can or fresh vegetable (chef’s choice) Cut meat and stir fry until brown and tender. Place meat, tomato juice, gumbo spice mixture, a can of beans and canned potatoes in Crock Pot. Add fresh potatoes later to thicken the soup.December 8, 2015

Good Enough Shrimp and Grits with Candied BaconGrits 2 1/2 cups Nora Mill stone ground grits 7 1/2 cups water 1 tablespoon 1 teaspoon kosher salt 1 1/2 cups Mountain Fresh Creamery cream 1 stick (8 tablespoons) unsalted butter 2 1/2 cups extra sharp cheddar, grated Combine water, salt, cream and butter in stockpot, stirring in grits over high heat. Stir constantly until boiling to prevent clumping. Lower heat to simmer, cover with lid, stirring occasionally for approximately 30 minutes, adding water if they get too thick.October 7, 2015
